assets\gif\433ee880bd7192400ee3c59489d572da.gif was a GIF of a woman dressed as Vocaloid Meiko dancing and accidentally hitting a chibi version of Vocaloid Kagamine Rin. This was originally posted by Twitter user Arak2, which itself is based on this video. Given the random subject matter and gibberish filename (usually evidence that a video or gif has been downloaded directly off of Twitter using an external program), this was most likely something a developer quickly grabbed off their Twitter timeline to test out GIF files and forgot to delete afterwards. It was eventually removed in version 1.0.2.
Meanwhile, a few significantly less strange GIFs were also present, featuring Pikachu’s animations ripped straight from the Generation VII games. These were all removed in version 1.0.3.
A sequence of images named "dmy_storyboard_present", likely placeholders explaining some sort of reward system where Pokémon are seemingly turned into presents.
In the text files for Pokédex entries exist two additional Pokémon titles, listed alongside the other games in the series. All Pokédex entries within the files associated with these are identical to the ones in the Omega Ruby and Alpha Sapphire Pokédexes, with the exception that all alternate formes have been removed. Given that NX is the Nintendo Switch's codename, this may suggest either that a Switch version of the titles was once planned, or (more likely) that Switch versions of the games were created for the sake of internal testing.
This page or section needs more audio. There's a whole lotta words here, but not enough audio. Please fix this. Specifically: Upload the Celesteela form's cry.
Jynx and Celesteela each have an unused second form with their own unique cries. One of the cries belongs to a scrapped Mega Evolution for Jynx that was conceived for Pokémon X and Y, which was scrapped out of fear of relitigating past controversies with Jynx. It is not currently known what Celesteela's additional cry is for.

Every Pokémon has a shiny form, even if there is no way to obtain those normally, usually do all encounters with them being shiny locked or non-shiny distributions. However, for the sake of posterity, HOME includes shiny sprites for all Pokémon, including ones with currently no way to be shiny. As of this writing, these areː
Each Pikachu in a Cap except for Partner Cap Pikachu, which was mistakenly allowed to be shiny. However, similar to the Pikachu look in game, there is no difference between these sprites and the normal ones.

Because the only Melmetal with the Gigantamax Factor is a gift from Pokémon HOME that is shiny locked, there is also no way to see the shiny form of Melmetal's Gigantamax form.
